Happy Dad’s Day to all the Pop’s, Bro’s and Dudes…we love you man!

Hoping you celebrate your favorite dad this weekend and what better way than to grill out! You can always check out some of the previous yum-a-licious posts like Grilled Pizza or a juicy filet, but how about Kabob’s?

Quick and easy these skewered delights can be light, satisfying and hearty depending on what goodies you like to grill! Here’s a suggestion…

Sweet BBQ Chicken Kabobs

1 lb. boneless skinless chicken breasts, cut into 1-1/2-inch pieces
2 cups fresh pineapple chunks (1-1/2 inch)
1 each red and green pepper, cut into 1-1/2-inch pieces
1/2 cup of your favorite barbecue sauce
3 Tbsp. frozen orange juice concentrate, thawed

HEAT grill to medium-high heat.

THREAD chicken alternately with pineapple and peppers onto 8 long skewers, using 2 skewers placed side-by-side for each kabob to avoid pieces from rolling around or falling off. (If using wooden skewers, make sure that you soak them in water for about 30 minutes to avoid the wood from burning.)

MIX barbecue sauce and juice concentrate; brush half evenly onto kabobs.

GRILL 8 to 10 min. or until chicken is done, turning and brushing occasionally with remaining sauce. (TIP: you may want to hold a little of the sauce back for dipping while eating!)

SERVE with corn on the cob, cooked rice or the Picnic Salad (See Simply Salads) and a BIG OLE HUG for the “Man of the Day”!!
