Well it’s almost that time of year again where this nation of ours celebrates kickoffs, commercials and a plethora of chow.
This seems to be the one “holiday” where anything goes. As long as you can nosh without taking your eyes off the screen, it’s in! So, c’mon share a few good ideas for the football feast that’s fast approaching.
Here’s some super quick, super easy and super scrumptious samples to start…
1) Brie – Easy and versatile. Just bake wheel of brie in a pie plate in a preheated 350 degree oven until cheese is soft and melty. You can top with a jar of your favorite chutney or drizzle with honey. Serve with crackers and sliced apples or pears. (If you have a Whole Foods near you, try the Adriatic Fig spread on brie, it’s amazing!)
2) Antipasto Platter – Again, easy breezy…we love that! In no time, and NO COOKING, you too can deliver a gorgeous plate of gastronomical goodies. On a large platter arrange an assortment of Italian meats (salami, prosciutto, etc.), sampling of cheeses (sliced provolone, fresh mozzarella – drizzled w/ olive oil and a little S&P and shards of parmesan) and a variety of olives and marinated peppers. Most stores now carry quite a few interesting jarred/marinated vegys…give ‘em a whirl!
3) Prosciutto Wrapped Melon – Such a great combination of sweet and salty! If you’re lucky enough to live somewhere where you can find some good, sweet cantaloupe, you have to try this. Cut the melon in larger bite-size chunks. Wrap each melon with a piece of paper-thin sliced Prosciutto and secure with a toothpick. (Optional – drizzle with some extra virgin olive oil and sprinkle with some course ground pepper.)
