Kick off summer with salads!

Memorial weekend is finally here and if the weather will cooperate we just might get our first picnics, outside parties and parades kicked off in fabulous fashion!

No matter where you’re going or what’s being served, here’s a great all-purpose salad that goes with anything under the sun. Whether it’s burgers, steaks, hotdogs or a good old-fashioned mystery potluck on the menu, Broccoli Salad is your accompaniment!

Broccoli Salad

1 large head of fresh broccoli

1/2 cup raisins

1/4 cup red onion, finely chopped

3 Tbs white sugar

3 Tbs white vinegar

1 cup mayo

1 cup sunflower seeds

10 slices of bacon, cooked until crisp, then crumbled (or – make it easy on your pretty little self and used store bought bacon bits!)

Chop broccoli into bite-sized pieces into bowl. Add raisins and onion. In small bowl, whisk sugar, vinegar and mayo. Pour over top of broccoli mixture and mix until all coated. Refrigerate for 2 hours. Before serving, sprinkle with seeds and bacon.
