Coffee break or brunch, blueberries pack a punch!

So it’s Monday and I’m already thinking about next weekend. C’mon, who doesn’t live for the weekends, right?? Weekends for me are filled with cooking up various treats – both sweet and savory. If you recall, BRUNCH is my favorite weekend word and all week-long I’m conjuring up ideas for that relaxing, morning or mid-afternoon meal we call Brunch. Here’s a gem that is great served with eggs, or a side of fruit or just with your good ol cup o’ joe!

Blueberry Lemon Coffee Cake

1/2 cup butter

1 1/3 cup sugar

2 eggs

1 tsp vanilla

2 cups buttermilk

4 cups flour

3 tsp baking powder

1 tsp baking soda

1 tsp salt

2 cups blueberries

Juice of 1/2 lemon

Zest of 1/2 lemon


2/3 cup flour

2/3 cup brown sugar

6 Tbls butter, softened

Preheat oven to 350 degrees. Grease and flour a 9 x 13 pan, set aside.

Sift together 4 cups flour, baking powder, soda and salt, set aside.

In a separate large bowl, mix together 1/2 cup butter and white sugaruntil light and fluffy. Beat in eggs one at a time then stir in vanilla, lemon zest and juice. Beat in part of the flour mixture at a time alternating with the buttermilk until just incorporated – don’t over mix. Gently stir in the blueberries.

Pour batter into the prepared pan. In a small bowl, mix the topping ingredients until it resembles large crumbs. Sprinkle over the top of the batter. Bake for 45-60 minutes or until a toothpick inserted in the middle comes out clean.

Cool and serve!
