Warm days…cool salads

For the moment the weather has taken a turn and it’s been down right HOT! (No complaints here Mother Nature, promise.) So immediately I think of my easy go-to, little-time-at-a-hot-stove meals – cuz by gosh, a cold beverage and a lounge chair are calling my name!!

This old stand by is as easy as it gets peeps, so whip up a batch of Tuna Pasta Salad and you’ll be soaking up the rays in no time!

Tuna Pasta Salad

16 oz. small shell pasta

3/4 cup diced carrots

3/4 cup diced celery

1/4 cup finely diced onion

12 oz. can light tuna in water

3 Tbsp fresh dill (or 1 1/2 Tbs of dried)

1 3/4 cup of light mayo *

S & P

(Optional: 1/2 lemon – Zest 1/2 lemon into mayo along with the juice of 1/2 lemon. Mix thoroughly with mayo then add to salad mixture. This gives it a great little citrus kick!)

Cook pasta according to package directions, rinse under cool water until room temp. Add all ingredients together in a large bowl and mix until well combined. Season with S & P to your liking. Serve immediately or refrigerate to serve later.

*This recipe can be made ahead and lasts several days in the frig. Note that it does soak up most of the mayo dressing and become too dry so you will need to add more mayo to make it creamy again.
